3 Ingredient Potato Soup

My grandmother is a fabulous cook. She has a blonde brownie recipe that her friends request over and over again and I've seen what it takes to make some of her recipes. Lots of time, lots of patience, lots of chopping, stirring, mixing and waiting and you know what? That isn't for me. I need the kinds of recipes that take minimal preparation, minimal ingredients, and minimal skill and this is one of those recipes. 

For one serving you will need:

1/3 of a package of frozen Hash Brown or Potatoes O'Brien Potatoes
1/3 of a package of Country Gravy Mix (use low fat or fat free for a lighter soup)
1 can of chicken broth
additional water as needed
1/2 tsp onion powder (optional)
1/4 tsp fresh ground black pepper (optional)
1/2 tsp chives (optional)



Instructions for one serving:

Add 1 can of chicken broth to a pot and bring it to a rolling boil. Add 1/3 of a package of frozen Hash Brown or Potatoes O'Brien potatoes to the chicken broth and bring back to a boil. Add 1/3 of a package of Country Gravy Mix to the pot and stir. If you are adding onion powder and fresh ground black pepper add that to the pot as well. Allow the soup to simmer until the potatoes mash easily with the back of a spoon, stirring occasionally. This will take approximately 15 minutes. If you see that the liquid is getting low add another half can of water. When the potatoes are soft remove the pot from the heat and add a 1/2 tsp of freeze dried chives if you are so inclined. Serve your soup. If you're feeling a little crazy add bacon bits and shredded cheese. If you want to make a whole pot of soup simply double or triple the ingredients.
